Fairview Stellenbosch Cabernet is a classical version of the theme. Wine making process follows the Charles Back way meaning that wine is produced in a “old school” way. Grapes are picked from plots of land that has “Koffieklip” meaning stones that are dark reminds of coffee beans.

Alcoholic fermentation is a mix of oak and steel vessels. Malolactic fermentation takes place in oak barrels. Barrel maturation takes place in french and american oak barrels.
